Anatolian women make winter preparations like Tarhana Soup. To this day, it is not uncommon to see sun-dried vegetables on the roofs and pots and pots of tomatoes boiling on the stoves before winter announces the end of certain crops. One of the stars of these preparations is Tarhana powder. Tarhana is a mixture of dried, fermented, and grounded vegetables such as tomatoes, peppers, onions, chickpea as well as yoghurt and herbs. The resulting powder is then put away to be cooked as a soup during winter. One simply must add the powder to Turkish tomato paste, boiling water and voila! The entire house immediately starts to smell like a family home. Although the name of the soup is a derivation of the word “poor man’s soup”, as it is rumoured to have been offered to a Sultan by a poor man during Ottoman period, today it represents health and tradition.
